So at the moment I'm going to recone my first speaker, so I'm definitely a newbie to this.
I've watched videos for reconing speakers but I still have a question. With the recone kit I've got contact adhesive, which I think is for the gluing of the; spider, cone and the surround to the chassis. But then I also have a little bottle with coating (white stuff), where is this used for?

there could be 2 possibilities. the bottle could be Latex for cone treatment - if it's liquid or it could be silicone for treatment of the cloth exterior suspension. (this usually looks like a cream)

I would say it has almost the same thickness as wood glue.
Here are some pics of the little bottle:

Yes that will be for cone treatment. Apply one coat evenly to the cone and surround with a paintbrush, once all the other glues are dry. There shold be just enough in that bottle to do the job. It is water based.

That is latex for the cone treatment
it will dry transparent so don't worry if the cone becomes white at first ;)

Acetone doesn't really attack contact adhesive - you need some toluene or xylene aka "glue remover". It will turn it soft and sticky so you can roll it off in little balls - it will stick to itself like Blu-tack does. I normally use a sharp chisel to get most of it off, and then a Scotchbrite pad with some more solvent to scrub the last bits away (Green plastic scrubber)
You'll find the glue remover is very volatile and evaporates almost as soon as you put it on, so pour out a small amount into a narrow vessel and use a small paintbrush to keep dabbing it on. Do this with the windows open, or you'll accidentally get high as f*ck.

The recone was successful , now my last question.
Must the spider also be coated with the coating?
