Any recommendations? During the course of this year I found myself being asked to engineer live bands as well as my usual Dj/selectors stuff and found myself lacking knowledge. I'd like to address this but due to circumstances there is no way I can go back to college full time.

Nathan Lively’s Sound Design Live has some excellent ones, free and paid.

SynAudCon as well.

Both are focused on actual engineering however not just pushing faders. The best way to learn that is to do the online course and go shadow the most ‘combat audio’ company in your area.
