Can anyone give me info on the difference between

push/pull and single ended valves

and also what does people prefer/desirable

Try google, there are lots of info about tubeamp topologies. 

Basically, SE amps are class A and pushpulls class AB thus having much better efficiency and more power output.

single ended tend to be at the lower wattage part of the scale such as radios and TV sound, push pull are what you get in high power amps such as PA, hifi and guitar.

A push pull will generate more than the sum of the two seperate valves and valve datasheets will often have 2 wattage ratings for the two circuits.

Both SE and PP requires impedance matching because tubes are generally high impedance devices (high voltage / low current) while speakers has low impedance -> transformer required. 

However, there are some special amp circuits called OTL, having many many parallel connected tubes which can feed speakers directly without output transformer.  
And there has been high impedance (800ohm) speakers designed for tube amps without transformer.

Actually back in the 1960's,  because I have one Philips radio/receiver having Stereo amplifier + 800ohm stereo speakers.  Amplifier stage is not single ended nor std pushpull, quite weird circuit. Two tubes (ECL82) / channel.  


Really nice sounding thing it is anyway!
